For the green salsa combine green capsicums, green chilies, ginger, garlic, onion and water in a blender and blend until smooth.
Heat oil in a pan and add black pepper and the blended mixture.
As the mixture begins to simmer over medium-low heat, season with salt and add chicken stock.
Allow the mixture to simmer for 10 minutes or until it is thick enough to coat the back of a wooden spoon.
