Ingredients
  • K&N’s Croquettes - as required
  • Potatoes - 2 cups; boiled and mashed
  • Green capsicum - ½ cup; chopped
  • Yellow capsicum - ½ cup; chopped
  • Tomatoes - ½ cup; chopped
  • Onion - ½ cup; chopped
  • Sweet corn - 1 cup
  • Cheddar cheese - 2 cups; shredded
  • Egg mixture - as required
  • Cheddar and Mozzarella cheese - as required; shredded
  • Italian herbs - as required
  • Red chili flakes - as required
  • Parsley - as required; chopped
Method

In a baking dish, add a layer of mashed potatoes and top it with green capsicum, yellow capsicum, tomatoes, onion, sweet corn, cheddar cheese and egg mixture.

Bake in a preheated oven at 392°F for 20-25 minutes.

Fry K&N’s Croquettes as per instructions on label.

Take out the baking dish; add a thin layer of Cheddar and Mozzarella cheese.

Top it with K&N’s Croquettes and sprinkle green capsicum, yellow capsicum, tomatoes, Italian herbs, red chili flakes.

Bake it again at 356°F for 10-15 minutes or until the cheese melts.

Sprinkle with fresh chopped parsley. Your Croquette Casserole is ready.

Ingredients

  • Eggs - 5
  • Salt - ½ tsp
  • Black pepper powder - ½ tsp
  • Red chili flakes - ½ tsp
  • Baking powder - 1 tsp
  • All-purpose flour - ¼ cup
Method

In a bowl, add eggs, salt, black pepper powder, red chili flakes, baking powder and all-purpose flour & whisk well. Your egg mixture is ready. Set aside.
