Prepare K&N’s Mortadella Slices as per instructions on pack. Set aside.
In a bowl add egg, milk, salt, black pepper and whisk until foamy.
In a non-stick skillet, melt butter over medium heat until foamy.
Add eggs and cook, stirring, until large, fluffy curds form and eggs are fully cooked for about 3 minutes.
Your scrambled egg is ready. Set aside.
In a large bowl, sift together flour, baking powder, salt and sugar.
Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled pan over medium high heat. Pour the batter in pan, using approximately 1/4 cup for each pancake.
Cook until brown on both sides. Set aside.
Take pancake, top it with lettuce leaf and scrambled egg.
Place tomato and add a layer of prepared K&N’s Mortadella Slice on top.
Cover it with another pancake and drizzle honey on top.
Your mortadella pancake sandwich is ready to serve.
