Ingredients
  • K&N’s PepO’Roni Slices - 20-25 slices
  • Eggs - 6
  • Potato onion mixture - 1 cup
  • Garlic powder - 1 tsp
  • Paprika powder - 1 tsp
  • White pepper powder - 1 tsp
  • Salt - 1 tsp / to taste
  • Oil - 2 tbsp
  • Fresh parsley - for garnishing; chopped
Method

Thaw K&N’s PepO’Roni Slices as per instructions on label and cut into half.

In a bowl, add eggs and whisk well. Add potato onion mixture, K&N’s PepO’Roni Slices, garlic powder, paprika powder, white pepper powder, salt and mix well.

Heat olive oil in a pan; add the prepared mixture. Cook each side for 3-4 minutes, or until done, flip carefully so that omelet does not break.

Transfer into a plate. Garnish with parsley and serve.

Potato Onion Mixture

Ingredients

  • Olive oil - 3 tbsp
  • Onion - 1 cup; julienned
  • Potatoes - 1 cup; thinly sliced
Method

In a pan heat olive oil and add onion. Let it cook for a minute.

Add potatoes and cook for 2-3 minutes. Turn off flame and set aside.
