Thaw K&N’s PepO’Roni Slices as per instructions on label and cut into half.
In a bowl, add eggs and whisk well. Add potato onion mixture, K&N’s PepO’Roni Slices, garlic powder, paprika powder, white pepper powder, salt and mix well.
Heat olive oil in a pan; add the prepared mixture. Cook each side for 3-4 minutes, or until done, flip carefully so that omelet does not break.
Transfer into a plate. Garnish with parsley and serve.
In a pan heat olive oil and add onion. Let it cook for a minute.
Add potatoes and cook for 2-3 minutes. Turn off flame and set aside.
